Cortijo Flamingos is a small family owned business which offers cookery breaks and holidays all year round - excluding summer (see the schedule for 2015/2016). Run by Peter and Kasia whose passion for food and cooking led them to launch their own retreat in Chiclana de la Frontera.

Your host will be Chef Peter with over fifteen years of experience of, and a true passion for, Spanish and Mediterranean flavours. Peter will show you how to cook classic Andalusian tapas, fish and seafood and meats.

If you are travelling to Andalusia, this private cooking experience is the perfect excuse to discover the beautiful area of Chiclana de la Frontera and the coast of Cádiz.


Peter sources only fresh and seasonal ingredients, mostly from their own garden and fish and meat from local markets. The cooking groups are small, usually four to 6 people.

The fun-filled cooking sessions are casual, informative and very hands-on. Peter's laid-back style and gentle nature will increase your confidence in cooking and inspire your imagination.


Day 1 : Thursday

Check-in until 11.00am then off to Chiclana food market, stopping at the Salt factory.

Off to Chiclana's famous la Barossa Beach. Glass of sherry at one of front beach bars.

On the way back visit Jamon cutting Bar . . . and lunch!

Around 5.00pm return to Cortijo Flamingos. Rest.

Starting cookery classe at 6.30pm. (Theme: Classic Spanish Tapas). Sampling what has been cooked. Socialise and dine together.

Day 2 : Friday

Breakfast served 8.30am to 9.00am.

Off to Cadiz food market. Take hop on and off bus to visit Cadiz, Coffee and snacks at local bar.

Take ferry catamaran boat to El Puerto de Santa Maria. Tapas lunch. Back on catamaran to Cadiz.

Shopping on the way back to Cortijo Flamingos. Rest.

Starting cookery classe at 6.30pm. (Theme: Spanish Fish and Seafood). Dine together.

Day 3 : Saturday

Breakfast served 8.30 to 9.00am.

Off to Jerez de la Frontera food market. Coffee at local bar.

Visit bodega with testing. Tapas lunch.

Around 4.00pm return to Cortijo Flamingos. Rest.

Starting cookery classe at 6.30pm. (Theme: Spanish meats) Dine together. Local flamenco show!

Day 4 : Sunday

Breakfast served 8.30 to 9.00am.

Check out until 11.00am. Time to say Goodbye.

Included in your cooking break:

  • Accommodation in Cortijo Flamingos or Casa Feliz
  • Cookery classes daily at Cortijo Flamingos
  • Tuition and transport during your stay (course only). It's recommended to hire a car.
  • All food, soft drinks and wine consumed at Cortijo Flamingos.
  • All tapas, lunches, coffee etc. during your stay.
  • Visit to winery and Sherry testing
  • Local Flamenco show
  • Bottle of Cava to share (Xmas & NY course/Valentine course only)
  • Jamon testing and other attractions are also included
  • You will receive an apron and recipes from Cortijo Flamingos.

This is only a sample schedule and is liable to change depending on winery/restaurant/ferry opening times etc. It is possible that some of the days will be changed around.



Located in a peaceful, semi-rural surroundings near Pinar de los Franceses only 15 minutes from an amazing La Barossa beach, with amazing weather and all the amenities of a private villa.

The Cortijo contains two separate houses, Casa Verde and Casa Roja. Each property comprises a large size bedroom with en-suite bathroom. Both have a comfortable double bed and double sofa bed. They are equipped with air-conditioning, wi-fi internet access, kettle, microwave, fridge, TV, DVD player, radio, iron and hair dryer.

The interiors of the Casas are newly decorated and combine old Andalucian and Moroccan rustic style with modern features.

Location is a big advantage - enjoying the beauty of the countryside you are also close to the town, beach and other tourist attractions. A car is recommended but if you are planning to stay in the Cortijo we can arrange a pick up service from the local airports.
