Bread in Fife. . . learn how to bake delicious breads in hands-on classes

Join us on a Wednesday or Saturday 10.00am until 4.00pm to learn how to bake delicious breads in hands-on classes with practical tips, plenty of opportunities to sample what we bake as we go along and lots to take home to share with hungry friends.

There is no special equipment needed, just a normal domestic oven and good flour. Come along on your own, with a friend or if you know someone who is just itching to learn how to bake bread why not give them a gift voucher for a bread baking and tasting session?

The format of the bread making classes

The baking classes start with tea/coffee while we discuss what we are going to make. There is a coffee/tea/clean-up break midway which will give you a chance to swap experiences and also to leaf through bread baking books for more ideas. We usually manage to fit in three oven baked yeasted breads plus something quick which we can have for lunch.

Classes are for a maximum of four people and a minimum of two.

"I went on the Essential Bread course and came away with oatcakes, pitta bread, two different loaves and a collection of bread rolls. I also came away with a lot more knowledge about bread making. And I had an enjoyable and social day. Colin is very welcoming and able to reassure the most nervous bread maker. But the results were fantastic and I will never buy oatcakes again!"

Our ingredients

Since we are working in a domestic kitchen our environment is not nut free. In the recipes where I normally use dairy products there are alternatives given for vegans. We use mainly but not exclusively organic flours, for instance the oatmeal we use is from Hogarth's mill in Kelso; wonderful meal from local oats, but not organic. The flours are mostly from Shipton Mill in Gloucestershire or Bacheldre Mill in Powys.

The butter and milk are always organic. For tins, trays, breadforms and all other baking paraphenalia look on Bakery Bits. If you come on a course you get a Bakery Bits discount.

Baking Essential Breads

This six hour hands-on class covers essential breads by which I mean breads you might enjoy everyday, breads to rely on like wholemeal loaves, basic white loaves, rolls and oatcakes. These versatile breads fit into any meal, rolls or toasted wholemeal for breakfast, white loaves for a light lunch, oatcakes with soup or wholemeal and a salad in the evening. We usually manage four or five of the breads listed but may vary what we bake (and we are open to suggestions).

Fancy breads

The breads in this 6 hour hands-on class have very distinctive tastes. By balancing the flours we choose with the flavours we are going to add we can end up with wonderful breads.

During our day’s baking we will bake four or possibly five breads involving herbs, spices and of course eggs and butter.

French and Italian breads

In this six hour hands-on class we snack from the start! All the breads are delicious straight from the oven. We will make two basic doughs, a straight dough i.e. one with no fats in it for breads like fugues and baguettes, and an olive oil dough for breads like focaccia. We will bake four or possibly five breads together during our day’s baking.

Lets Bake a Picnic

Pirozhki - little Russian pasties, roast vegetable picnic loaf, banana loaf - nearly healthy, apple and almond ring - again nearly healthy, panini for jam or cheese or anything really. Now all we need is a coffee flask and some sand to give that picnic crunch!?!?

Gluten free baking

Catherine Baker of The Auchtermuchty Cake Company, who has a wealth of experience in gluten and wheat free baking, is running gluten free baking classes in conjunction with Bread i nFife.

The menu is pizzas (for lunch), corn bread, white loaf, oatcakes and oatmeal crepes. While Catherine is the expert guiding us all, I expect this to be a class where each person attending will be contributing information on ingredient suppliers, recipes, disaster stories and triumphs.

Please be aware that the emphasis is on gluten free baking and the recipes do use eggs, butter and milk.

"Had a lovely day with Colin baking breads, rolls and oatcakes. He was relaxed and friendly and very amenable to all sorts of odd questions. Bread making process is really interesting. Bed and breakfast accommodation two miles from Bread in Fife. The log cabin guest house is set between Ladybank and Pitlessie villages and close to Falkland and Glenrothes.

The four B&B terraced log cabin bedrooms are all on the ground floor with private off-road parking outside. Each en-suite bedroom has it's own entrance from the outside of the building and use of a communal guest lounge with free WiFi. Each room has a cosy double or twin beds, TV/DVD, 2 chairs, en-suite shower room, hospitality tray, hairdryer and toiletries. Guests also have use of the gorgeous guest lounge - situated beside the bedrooms - a great place to relax in after a day out exploring Fife. Cooked or continental breakfast is served in our conservatory over in the main house.
